If you don't update your client until the server announces that it's updated, you will be fine. Alternatively, you can save a version of your .jar before updating and switch them out between SMP and single player.

See, I thought about doing this, but then i didn't  So now I'm SOL.... but hey, that's okay. Now I have time to work on my animations I'm doing for a competition.
